Cacahuates (Peanuts)

Two shortcrust-like cookies shaped like peanuts. They are typically filled with cream, but I used apricot jam for this recipe.

Equipment

  • 1 large baking sheet
  • 1 large silicone mat
  • 1 large piping bag
  • 1 large piping piece

Ingredients
  

  • 1 cup room temperature butter +2 TBS
  • 120 g powdered sugar 1 cup
  • 1 1/2 tsp vanilla extract
  • 310 g all purpose flour 2 cups
  • 2 TBS milk
  • jam or filling of choice

Instructions
 

  • Preheat oven to 350F
    Beat butter, sugar & vanilla until fluffy.
    Gradually add flour and mix until it comes together. Then add milk until entire dough is well incorporated.
    Place the dough in a large pastry bag with a large tip.
    Pipe dough onto a silicone lined baking sheet. Make dough strips about 1to 1 1/2 inches long.
    Bake cookies for 15 minutes, until golden.
    Cool completely, 15-30 minutes.
    Apply a small amount of jam in center of one cookie and place the other cookie on top. Gently press down.
