Besos

Also known as Yo-yos. Two shortbread cookie domes with a fruit filling in the middle.

Equipment

  • 1 large baking pan
  • 1 small cookie scoop or 2 TBS measuring spoon
  • 1 pastry brush

Ingredients
  

  • 500 g all-purpose flour
  • 200 g granulated sugar
  • 2 small eggs
  • 250 g unsalted butter
  • 20 g instant yeast
  • 1/3 cup milk
  • pinch of salt
  • jam of choice

Varnish

  • 1/2 stick of butter softened
  • fine sugar

Instructions
 

  • Preheat oven to 370 °F
    Combine butter and sugar and mix until there's a smooth texture.
    Once well integrated, add eggs.
    Add milk, a little at time until combined.
    Gradually add flour, yeast and salt.
    With scooper or spoon, scoop equal pieces. Roll into a ball, gently press. Should look like a dome. Place on parchment lined baking sheet.
    Bake for 20 minutes, until golden.
    Let them cool a little before adding jam. If you add jam while cookie is too hot, it will melt the jam.
    Add about 1 tsp jam to center of bottom cookie and add the top part, gently press down.
    Butter entire cookie and roll in fine sugar.

Notes

Milk measurement was updated and changed to cups. Video measurement is in grams.
